Ingredients
  

  • 15 oz. (400 g) cassava (peeled and cut in large cubes)
  • 1 link Field Roast Italian Garlic & Fennel Sausage (200 g) (sliced)
  • 2 med. tomatoes (400 g) (chopped)
  • 1 med. yellow onion (chopped)
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 2.5 cups water (625 ml)
  • 2 cloves garlic (crushed)
  • 1 tsp ground cumin (or to taste)
  • 2 tbsp green onion (chopped)
  • 2 pinches oregano
  • salt (to taste)
  • black pepper (to taste)

Directions
 

  1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2 minutes, until softened.
  2. Add the vegetarian sausage and sauté for 3 minutes, or until lightly browned.
  3. Add the tomatoes, tomato paste, salt, black pepper, and cumin. Mix well.
  4. Add the cassava and water. Increase the heat to a boil, then reduce to medium-low. Cook for 30–45 minutes, or until the cassava is tender. Stir occasionally and check if more water is needed.
  5. Taste and adjust the salt if necessary. Add the green onion and oregano, stir, and serve immediately.
